Flourless Brownies made on red kidney beans

On the weekend I shared a photo of my favourite Flourless Chocolate Brownies on Instagram.  I had a few people ask me for the recipe so I thought I would share it with the Ironchick community.  They are made on beans which must mean that they’re good for me – right?  Who cares, they’re delicious and it is good to get your nutrients from a variety of sources.

They’re super easy to make and almost fool proof (they always seem to work for me AND they still taste good).  That on top of being delicious makes them a great recipe.  My kids beg me for them.

FLOUR-LESS CHOCOLATE BROWNIES

1 tin of beans drained and rinsed (any kind of bean such as chick pea, cannellini, bortoli, butter, red kidney)

2 eggs

3 egg whites

4 tablespoons of cacao powder

1 1/2 tsp baking powder

1/2 tsp baking soda

2 tablespoons of butter or coconut oil

1 tsp vanilla extract

1/3 cup of cream cheese (I have also substituted this with yoghurt once before)

3/4 cup sugar (you can use coconut palm sugar – just adjust the amount to your liking)

DIRECTIONS

1.  Place all the ingredients into a blend and mix for 3-5 minutes

2.  Pour into a prepared cake tin or slice tray.

3. Bake at 180 degrees for 30-35 minutes

  1. Made these tonight using cannellini beans and brown sugar and they are fantastic! They don’t have the dense texture of a regular brownie but you would struggle to figure out that there was no flour in there. Definitely one to add to the repertoire 🙂

  2. Yum. These worked really well. I took them to work and no one guessed beans! I also found this carrot cake/muffin recipe (from a Stephanie Alexander book) works well with 3 egg yolks:

    Preheat oven to 180C

    125g SR Flour (I used GF flour)
    3/4 cup coconut palm sugar
    1/2 tsp cinnamon
    1/2 tsp nutmeg
    2/3 cup olive oil
    3 egg yolks, lightly beaten
    2 cups grated carrot (this was roughly 2 medium carrots)
    60g roughly chopped walnuts.

    Mix flour, sugar & spices till just combined. Then add oil & eggs till just combined. Stir in carrot and walnut. Spoon into a smallish (18cm) loaf tin and bake for 40-60mins.

    It got the thumbs up from the family.
