As of the 1st of July I’m going sugar free. Awkward pause. Eeeeek. I am going to be disgusting for at least a few days, but I am determined to give it a shot. I’ve done this is the past and I’ve found that I am much better when I’m well prepared with healthy, sugar free snacks ready to roll. These jumbles are one of my favourites. They’re so delicious and easy to snack on.
Banana, Date, Apricot & Oatmeal Jumbles
3 large bananas, mashed
2 cups rolled oats
1 cup chopped dates
1/2 cup chopped dried apricots
1/3 cup oil (macadamia, peanut or olive)
dash of salt
1 teaspoon vanilla essence
** you can add in nuts if you would like **
Preheat the oven to 180 degrees
Combine all the ingredients and allow to rest for 15 minutes so the flavours mingle
Roll (or drop) teaspoons of the mixture onto an baking sheet and bake for 20 minutes or until brown.
